    Lasagne is the traditional feast dish of Italians (although some say Ancient Greece but let’s not go there!) and is usually the first or pasta course for Christmas and Easter.

    A well-made lasagne is a labour of love with only the best ingredients. Every layer has its own traditional recipe and methods, all perfectly constructed to create mouthfuls of pure bliss.

    A good ragu of beef and pork mince can sometimes take 12 hours to cook with the belief that the longer they cook for, the tastier it is.

    This is then followed by the tricky bechamel sauce where you have to find the balance of not burning it as you ensure there are no lumps as you mix the flour, butter and milk.

      Oh, goodness, I’ve just been schooled in salads! Wow, so very impressed! 🤤 With 3 gallon sized bags of fresh lettuce in the fridge (after needing to harvest from our first round of snow this year), I was wondering what the heck to do with all of this lettuce.
