Cut potatoes in half or quarters depending on the size.
Place cut potatoes in a large mixing bowl and add olive oil and thyme. Mix well.
Preheat the air fryer for 3 minutes at 200°C or 400°F.
Add potatoes into the air fryer basket. Depending on the size of your air fryer, you may need to do this in two batches.
Fry for 15 minutes or until golden brown.
At the halfway mark, pull the air fryer basket out and give it a good shake so that all the potatoes are fried evenly.
Once potatoes are fork tender and golden brown, remove from the air fryer and place in a large bowl.
Add truffle salt to potatoes and mix.
Serve warm.

Do not overcrowd the air fryer basket as the potatoes will not cook properly and will not give you a crispy crust.
You can roast the potatoes in a preheated oven at 200°C or 400°F until golden brown. Use 4 tablespoons of oil and season as required.
Make sure the potatoes are dry before coating with oil. Water and oil don’t mix well.
Alternative roasted potato seasonings if you don’t have truffle salt: - garlic powder with mixed dried herbs - onion and garlic powder with a dash of paprika - use rosemary instead of thyme and season with sea salt - black pepper and sea salt - lemon, garlic and sage - chilli flakes, turmeric powder and sea salt - toasted cumin seeds - grated parmesan
You don’t need to parboil potatoes before air frying.
Replace baby potatoes with your favourite variety and mix of potatoes.
