Try a different approach to fries and give our air fryer parsnip fries a whirl. Crispy outside, soft inside, and a delicious sweet, nutty flavour, air fryer parsnip fries are fantastic and a healthier side dish option.
In a large mixing bowl, add parsnips with maple syrup, garlic powder, salt and paprika. Mix well to make sure parsnip chips are well coated with seasoning.
Spray parsnip fries with cooking oil of choice.
Preheat the air fryer for 3 minutes at 200°C or 400°F. Place in an air fryer basket and fry for 15 minutes or until golden brown.
Place marinated red peppers, mayonnaise, lemon juice and garlic in a food processor and blitz until smooth.
Serve air fryer parsnips chips with roasted pepper mayo on the side.

If you don’t have an air fryer, bake in the oven for 15-20 minutes or until golden brown, flipping halfway.
Don’t overfill the air fryer basket to give it room to fry properly. Fry in two batches if required.
Choose small-medium parsnips over larger ones.
