    This herbalicious Basil and Mint Dressing is so refreshing and a party in your mouth. Perfect for those spring/summer salads!

    Ah sweet, sweet basil! How aromatic and tender you are! Of all the herbs, the basil reigns supreme. I guess it’s not called the “King of Herbs” for no reason.

    Basil has been cultivated for more than 5000 years with the ancient Egyptians using it to embalm their mummises. In fact, basil comes from the Greek name Basileus meaning “king”.

    For me however, basil is the “King of Herbs” because it is the most so incredibly aromatic.

    Walk past an entire section of herbs and the sweet basil is always so distinctive on the nose as it wafts through the air with very little need to fight for supremacy.

    There are however many varieties of basil. Apart from the sweet basil which we are so familiar with, there is Genovese basil popular for pesto recipes, lemon or lime basil for slight citrusy notes and Thai basil with its strong hint of liquorice.

    Thai basil makes an appearance in Southeast Asian cuisine quite regularly, particular Thai cuisine.

    Its purple stems and sharp leaves with purple veins is quite a different looking basil compared to the sweet basil. The most famous dish would be pad kra pao gai, Thai basil chicken.

    For this salad dressing recipe, I decided to complement the basil with yet another strong, aromatic herb. The refreshing mint. This dressing smacks you in the mouth with all the right herbaceous notes.

    Basil and Mint Dressing Ingredients

    Basil: Beautiful, aromatice and oh so sweet. Blend it to release all the wonderful flavours of the basil and let it seep through your salad recipe.

    Mint: Refreshing minty goodness. Add just as much mint to basil for a truly herby dressing.

    Lemon: Add some cirtusy notes to the dressing. Always such a good touch of tartness.

    Red wine vinegar: Good base for a salad dressing.

    Olive oil: Can’t have a dressing without olive oil!

    Salt and pepper: Just season to taste. Don’t need too much.

    Basil and Mint Dressing Method

    Super easy but super fresh and adds so much flavour. Great zippy mint dressing that would work well not only for leafy green salads but with boiled potatoes, roast lamb or steamed greens.

    Basically just blitz everything in one hit. Can’t get more simple than that.

    I used my food processor for this as it was the quickest way to combine the ingredients. You can finely chop everything if no food processor is available.

    Place basil and mint into a food processor and blitz until well blended. Add lemon juice, red wine vinegar, olive oil and blend until combined. Take the lid off the food processor, add lemon zest and stir together.

    Season with salt and pepper to taste.

    Ingredients

    • ½ bunch mint
    • ½ bunch basil
    • 1 lemon
    • 4 tbsp olive oil
    • 1 tbsp red wine vinegar
    • salt, to taste
    • pepper, to taste
